Kurt Timmermeister, always on the cutting edge of life is thinking about death. How could he not? He is building a cave in the earth which will last centuries beyond him.

What a legacy to contend with. Though, before for he does kick the bucket, he is going to make cheese. Lots of amazing cheese for many, many years which will decay with precision. The climate in the cave will be controlled by the surrounding earth and an air lock. It has been engineered to produce a specific temperature, what that temperature is–we do not yet know. Which also means, we do not know what cheese will come forth from that cave.

As Luke said during his first visit to the site, “ this is the beginning of a facility whose service life will last  hundreds of years.” I like thinking of this 300 square foot room buried deep in Kurt’s pasture in terms of service. Not only will it serve Kurt’s needs, but it will serve the needs of humanity.

Where does he get off? What inspires him? How does he know what to do? It’s because Kurt has moxie.

He has the drive to connect people with food. And connect we will.
